Ingredients :
1/4 tsp . coriander seeds1/4 tsp . fennel seeds1/4 tsp . caraway seeds1/2 tsp . cumin seeds1/2 tsp . ground turmericPinch of red pepper or to taste1 Tbs . olive oil1 medium carrot , thinly sliced1 average cerise onion , canton and thinly sliced crosswise4 large garlic clove , minced1 medium red , orangish , or chicken doorbell pepper , thinly sliced vertically , then cut into 1 - 1/2 - inch sticks2 cups sliced green or gold courgette or other summer squash1 medium tomato , peeled and thinly slit vertically2 Tbs . dry out currants1/2 tsp . salt , plus more to taste2 Tbs . minced flat - leaf parsleyFreshly basis black pepper2 Tbs . coarsely chopped salute almond

Note : To strip down the tomato plant easily , immerse it briefly in boiling urine , then in frigid pee ; the tegument will slip off promptly .
