“ Mater , Tater , Onion Soup ” is a red-blooded and promising dish that get all of the fantastic flavors of summer tomatoes . This simple , yet solid , soup is one of the most beloved and treasured recipes egest down by my agnate nan .

Mamaw Kitty always had a house full : grand - kids , nieces , nephew , and plenty of extra tag - a - longs . Any throw summertime nighttime , she would have 7 or 8 well fed kid sleeping on pallets in her living room floor . One of the dishes that she fed us all frequently was this soup . Now that we are all grow , we make this for our own short tribes . The kids love it . Friend love it . We all have a go at it it .

This soup is so incredibly directly forward . If you were to   have ask my grandmother for a formula , she probably would have answered , “ It ’s just mater , taters , and onions . ” For years , I have had many people need me for this formula , and I have always said that it is really just the legerdemain of those three round-eyed ingredients . But , I have eventually decide to do work out some basic measurements and the process for making it . I ’m sure each of my full cousin have their own mutation of our grandmother ’s   original , but   we all still keep it pretty canonical . My version is totally vegan , and I have added a few seasonings and tiny touches to make this a more worthy recipe for canning .

As is the case for most beautifully simple foods , the quality of the ingredients is key . Vine mature summertime tomatoes make the best soup . If you grow your own potatoes and onion plant as well , you are in for a veridical kickshaw .   Two years ago I made a batch of this soup entirely from home - grown vegetable , and it was incredibly solid to know I did not have to purchase any of the main fixings . I did the same this year and made a twofold mountain with ingredients from our gardens : Yukon gold and Red Lasoda potato , Candy and Super Star onions , and a myriad of assorted Lycopersicon esculentum .   This soup is   good if it is made   from store - bought ingredients , but it is really amazing with fresh home - grown veggies .

I make and can this every   summertime when our counter top start fill up with tomatoes .   We rely on batches of this soup   to provide easy weeknight dinners all wintertime long . “ Mater , Tater , Onion Soup ” with grill cheese sandwich is one of our favorite   sept meals . It   is also really heavy when served with brisk cornbread ( how my Mamaw help it ) . But , you could laden this soup with no accompaniment and it would still be a wonderful meal .

Making a canner full of this soup is a bit meter - down , but deserving all of the effort . In the middle of Winter when I am missing cherubic Summer Lycopersicon esculentum , I can open up a jar of this soup and feel the affectionateness of July . There is really no   good way to   can tomatoes .

This soup and any other foods containing potatoes should be pressing canned in social club to be regard safe . The vinegar and lemon succus added to this soup are to enhance savour , but are not added to increase acidulousness in social club to safely lower processing times or water bathtub can . Potatoes should be peel .
